The month of love is here! With Valentine’s Day next week I thought about how I can treat my boyfriend without all the refined sugar and unneccessary carbs store bought treats are loaded with. As he has a serious sweeth tooth, I’m slowly trying to stir him away from his sugar addiction.
As you may know from this post, I’m doing the Love Your Body Challenge by the Tone It Up Girls. They hold challenges several times throughout the year and with each challenge comes a new update of their Nutrition Plan. As you can imagine the Love Your Body Edition is all about this month’ theme of love and has tons of yummy Valentine’s Day treats recipes.
As a huge chocolate lover I could not wait to try their new recipe for the Chocolate Beet Mini Muffins, even though I was a little intimidated by the thought to put beets into my muffins 🤔. I’m not a huge fan of beets. But I was surprised when I taste tested the finished batter. It was amazing!!! You could not even make out a hint of beet. It was more like a chocolate orgasm in my mouth 🤩.
So I knew I had to feature this recipe on my blog. But I also wanted to take it to the next level and add my favorite fruit: raspberries! In my opinion, nothings goes along better than chocolate and raspberries!
I know most people envision chocolate covered strawberries when thinking about a romantic Valentine’s Day date. Don’t get me wrong, strawberries are delicious too! But nothing can beat the sweet taste of raspberries!
With a little experimenting in my kitchen, I came up with this delicious and still healthy and nutritious Valentine’s Day sweet treat! Let me introduce you to Cupid’s Chocolate Raspberry Kiss:
The best part is that you probably have all the ingredients in your pantry already. It took me less than 30 minutes to throw all the ingredients in my blender and pour the batter into the muffin tray. It then takes an additional 24 minutes to bake them. And et voilá, you have the best sweet gift ever!
You can either decorate them with sprinkles, more chocolate or leave them as they are. I used little sugar hearts because they gave them this “love is in the air” feel!
